RESUMO:

The University restaurants are Food and Nutrition Services aimed at providing healthy meals from a nutritional and sanitary perspective, as well as encouraging the development of sustainable practices through the concern for the preservation of the environment. The project aims to suggest sustainable actions related to the production of collective meals, with emphasis on the adequate management of natural resources such as water, energy and solid waste management, aligned with the Institutional Sustainable Logistics Plan (PLS / UFRN). Considering that the activities related to the preparation of meals have peculiar characteristics from the reception of the merchandise to the final distribution of meals where commonly, high rates of waste and generation of residues are registered. It is, therefore, an active research, quantitative and descriptive, in which solid residues, separately in organic and inorganic, will be quantified, being further categorized according to the selective collection. As well as the waste indicator, by means of the rest-ingestion index, check the energy demand and consumption at the tip and off-end for general operation (production of meals) and water by means of meter of input volume measurement of the water tank, in addition to document analyzes, and internal records. Data will be collected for 31 days. For the quantitative analysis of the data, statistical techniques will be used to obtain percentage distributions, and the data will be organized and tabulated in a database using Microsoft® Excel software. In order to evaluate the impacts and to suggest the most sustainable actions, the feasibility of the unit will be considered together with the other units involved, with the Institution's environmental policies. The results are expected to contribute to the management of collective feeding to reduce waste, and consequently costs and to minimize environmental impacts. In addition to the pragmatic contribution to other studies in the area of institutional nutrition, aligned with the realities arising from sustainability in favor of environmental preservation for current and future generations.
