SUMMARY:

Institutional food service is a sector responsible for providing more than 20 million meals per day in Brazil, being an important segment in the acquisition of food and meal production. The production model based on agribusiness has consequently increased the use of pesticides in agriculture, and their use in the field affects the entire population, causing negative impacts on health and the environment. Data on chronic exposure to pesticides is limited, making it extremely difficult to determine the real effect of these compounds on human health. In this sense, the assessment of the estimate of residue intake through food is a data acquisition strategy that seeks to expand the role of nutritionists and other health professionals and support actions and policies to combat pesticides. The aim of the study was to assess the risk of exposure to pesticides in foods offered in institutional food units located in the state of Rio Grande do Norte. The research, of a cross-sectional, quantitative, and descriptive nature, analyzed 120 menus from 06 institutional restaurants regarding the permission of active pesticide ingredients in foods and their potential risk. The amount of each food offered was evaluated according to per capita quantities and frequency of use in the menu. To assess the pesticides authorized in the country for use in foods, Maximum Residue Limit (MRL) and Acceptable Daily Intake (ADI) data for active ingredients listed in the Pesticides Monographs of the National Health Surveillance Agency - ANVISA and the Codex Alimentarius were collected. For the analysis of the estimate of Maximum Theoretical Daily Intake (MTDI), the calculation was performed based on the relationship between the pesticide's MRL and the amount of food offered. The MTDI was expressed in mg/kg and compared with the ADI for risk assessment. Pesticides possibly present in foods were grouped into ADI ranges, ranging from 0.1 to 100%, and the pesticides were characterized regarding their toxicological, agronomic, and bioaccumulation potential. In this study, 263 authorized active ingredients were identified for 40 foods, with the majority being insecticides and fungicides, presenting an extremely and highly toxic classification to health. The research highlighted the presence of multiple residues in a single food, with emphasis on rice, beans, pasta (wheat), potatoes, tomatoes, milk, and ultra-processed sauce. The analysis identified 42 compounds with a high potential for bioaccumulation, especially for the active ingredients present in animal-derived foods. In all analyzed food groups, there were pesticide active ingredients that exceeded the ADI value. The estimate of the intake of these residues demonstrated that methomyl (a carbamate insecticide) possibly presented an unacceptable intake risk, as it exceeded the ADI. The analysis allowed identifying that most of the active ingredients possibly present in foods are within an acceptable range for ADI. However, it is essential to recognize the hazards of continuous exposure throughout life, as well as the permission of pesticides prohibited in other countries due to their high toxicity in humans. The results of this study reinforce the need for a transformation of hegemonic food systems into agroecological systems with a reduction or exclusion of the use of pesticides, to ensure the quality and nutritional safety of foods, especially those offered in institutional menus.
