SUMMARY:

Food contamination by Enterotoxigenic Staphylococcus spp. is quite common because they are naturally present in human airways and isolated from various animals, mainly in dairy animals, making contamination easy. During multiplication in food, several species of the genre are capable of producing enterotoxins, causing staphylococcal food poisoning, which despite the underreporting caused by the short duration of clinical symptoms and absence of medical care, is one of more common foodborne diseases (DTA) in the world. This systematic review aims to relate the result of existing studies worldwide about the prevalence of Enterotoxin in food, the profile of foods covered, and the types of toxins identified. The protocol was registered in PROSPERO (CRD42021258223) and was structured according to the proposals in the Prism-P (preferred report items for systematic review and meta-analysis protocols). To search for the studies were used as given bases: Medline (Ovid), Gale, Science Direct, CAB Direct (CABI), Google Scholar, in addition to manual search in the reference list of articles, directory of theses and dissertations, and health agencies of the countries. The primary outcome is an identification of Staphylococcal Enterotoxin in the food, and the secondary outcomes have included the types of toxins and the foods covered. Primaries studies reported the analysis of staphylococcal enterotoxins in Staphylococcus spp. The studies were imported to Rayyan. Two researchers have selected the studies and are finalizing the data extraction. To evaluate the risk of studies bias, the tool developed by Joanna Briggs Institute (JBI) will be used. All such as steps have been performed independently and a third reviewer will resolve the conflicts. Narrative synthesis of the results will be performed and, if possible, we will perform the prevalence of the staphylococcal enterotoxin prevalence in food, if the results are considered homogeneous after the evaluation of the heterogeneity of the results through the I-Quadrado (i²) and chi-square statistics (χ²). The results will expand the overall perception of food safety risks, emphasize the gaps in the area, contribute to the study of the epidemiological profile and guide efforts from health organizations to develop preventive measures related to good food handling practices.
