SUMMARY:

Parasitic contamination in vegetables is a reality in several countries and a challenge for food safety with a short path from field to table, these foods may suffer several failures in good production practices, transportation, and packaging that culminate in offering contaminated foods to consumers. Considering this a systematic review was conducted to scientifically demonstrate the effectiveness of sanitization protocols in decontaminating parasites in vegetables. This review were performed according to the Cochrane Handbook guidelines for systematic reviews and following its criteria of transparency, reproducibility, and impartiality in the synthesis of evidence found. Critical appraisal was made by adapting of the Risk of Bias Tools for food analysis, and the quality of evidence evaluated by GRADE. The review had a total of 31 studies included, most of them conducted in countries with a high incidence of parasites in vegetables. Physical treatments showed the greatest effectiveness in parasite decontamination, excluding those performed only by immersion or rinsing in water, and interventions combined with chlorination of 200ppm. Other outcomes of this review were: the average time needed for decontamination, the most identified parasites, and the cost-effectiveness analysis of the interventions applied. Although the level of certainty of the evidence has been reduced by the moderate bias and the high methodological heterogeneity among the primary studies, we believe that the results of this review can contribute to decision support for choosing the best protocol for sanitizing vegetables.
