SUMMARY:

Probiotics are live microorganisms that, in sufficient amounts, can offer benefits to its host’s health. For the product to become more nutritious, prebiotic substances can be added, such as fructooligosaccharides (FOS), carbohydrates which can favor probiotics’ growth and action. The present project aimed to elaborate and evaluate fermented and unfermented symbiotic yellow mombin (Spondias mombin L.) juices added with fructooligosaccharides (FOS) and Lactiplantibacillus plantarum NRRL B4496 during 28 days of refrigerated storage at 4 ºC. To analyses the juices six formulations were prepared: standard mombin juice (PAD), prebiotic juice (PREB), unfermented symbiotic juice (SIM), fermented symbiotic juice (SIMF), unfermented symbiotic juice with pH adjusted to 4.5 (SIMA) and fermented symbiotic juice with pH adjusted to 4.5 (SIMFA). Samples were analyzed for bacterial viable counts, pH, titratable acidity, total soluble solids (TTS), total phenolic compounds (CFT) and antioxidant activity on storage days 0, 7, 14, 21 and 28. Viable counts of 9.0 (1.0) log UFC/mL and 9.0 (2.3) log UFC/mL could be observed with 21 days of storage for SIMF and SIMA, respectively, while SIMFA showed a value of 8.2 (0.1) log UFC/mL by the end of the 28 days period. All formulations showed a slight decrease in pH values by 28 days in relation to the star of the storage, except for SIMF which kept stable during the whole period. Titratable acidity values for formulations without pH adjustments showed no significant difference comparing day 0 to day 28, while formulations with pH values adjusted to 4.5 had a small decrease also comparing the initial storage day to the 28th. SST values for all formulations had minor increase during storage followed by a slight decrease by day 28, returning to values statistically equal to the starting ones. Besides different variations in each formulation during the whole storage period, all formulations showed no significant different in CFT comparing the starting and finishing days of the analysis, except for SIM which had a minor decrease. Antioxidant activity was kept stable in PREB, SIMF, SIMA and SIMFA, had a slight growth in SIM and significant decrease in PAD regarding 28th day in comparison to day 0. Through observation of the obtained results, it is possible to consider yellow mombin juice fortified with FOS as a viable matrix for the inoculation L. plantarum, keeping stable counts of symbiotic formulations
