SUMMARY:

Buriti oil is extracted from the fruit of the buritizeiro (Mauritia flexuosa L.F.) being rich in carotenoids, especially β-carotene, tocopherols, unsaturated fatty acids, in addition to other nutrients that have antioxidant characteristics. The sensitivity to light, heat, humidity and oxygen that oil and bioactive compounds present justify the use of nanoencapsulation to maintain the stability and integrity of the compounds The objective of this work was to encapsulate buriti oil using swine gelatin and evaluate biological activities of nanoencapsulation oil with swine gelatin compared to crude oil. The encapsulated obtained were characterized by Infrared Spectroscopy with Fourrier Transform (FTIR), Laser Diffraction, and encapsulation efficiency (%). For the testing of biological activities, antioxidant activities were performed by different in vitro methods: total antioxidant capacity (TCA), ABTS, and Reducing Power. The evaluation of the modulating antimicrobial activity was carried out with gram-negative and gram-positive bacteria using two antibiotics. The FTIR indicated new chemical interactions present in the encapsulated products due to the formation of new vibrational bands with the swine gelatin. The encapsulation efficiency was 89.56%. The results of the antioxidant activity show that for the TCA test (48.34 mg AA / g sample) and the reducing power the encapsulated one presents a greater antioxidant activity when compared to the crude oil. In the ABTS test, the IC50 values for encapsulated [1.41 (0.04)], and crude oil [(1.43 (0.04)] are not significantly different. The modulating antimicrobial activity using encapsulated oil reduced the inhibitory concentration of norfloxacin by 98% and gentamicin by 80%, while crude oil had a reduction of 96 and 68%, respectively. The encapsulated buriti oil has greater biological activities when compared to crude buriti oil which can be explained by the protection given to bioactive compounds with antioxidant and antimicrobial properties.
