The production of artisanal cheeses is generally made from raw milk, empirically and without strict controls on the hygiene and final quality of these products. The aim of this research was to characterize the production system and investigate the microbiological profile of artisanal rennet cheese in the Seridó region of Rio Grande do Norte. The cheesemakers who produced artisanal rennet cheese were surveyed and screened. A total of 136 cheesemakers were selected and a questionnaire was administered on the spot by interview. Forty-five samples of handmade rennet cheese were collected from eleven municipalities in the Seridó region to analyze the microbiological profile of the cheese. Of the cheesemakers studied, 63.2% have been on the market for more than 10 years, but only 8% have health inspection records. The total volume of milk processed by the cheesemakers was 58,678 liters/day, 92% of the milk received is not refrigerated. In 97% of the cheese makers, raw milk was used to make the cheese, and only 25% carry out quality analysis of the raw material. The results for Staphylococcus aureus, Listeria monocytogenes and Salmonella sp. were within the standard set by the legislation, but for coliforms at 35 and 45°C, more than 40% of the samples were contaminated above the legal limit. In conclusion, it can be seen that there is no standardization in the production of rennet cheese in the Seridó and that the microbiological profile of rennet cheese does not meet all the standards established by current legislation.
