SUMMARY:

This study aimed to characterize the milk production in the State of Rio Grande do Norte and the qualitative and quantitative characteristics of milk. Regarding milk production, data available on the IBGE website regarding milk production by municipality, micro and mesoregions in the period between 2010 and 2020 were used. Two mathematical models were used to calculate the fluctuation of production of milk (liters/year) during the period analyzed. The first model considered was calculated by the difference between the milk productions of the 2020 years compared to 2010 and this difference multiplied by 100. Values above 100 indicate production growth while values below 100 indicate a decrease in milk production between the two years, with values equal to 100 indicating that there was no change in production. The second mathematical model used was the average annual growth rate (TMAC), which is calculated as the difference observed between a given year and the immediately preceding year, with this value being divided by the production of the previous year, so that every year between 2010 and 2020 had their values computed for the calculation of TMAC. In the first model, some municipalities in Potiguares had growth, when compared as the reference year data on milk production in the year 2020 in relation to the production in the year 2010, exceeding 300% (Parazinho, Lieutenant Laurentino Cruz, São Bento do Norte, Itajá, Jardim de Piranhas and Baia Formosa, located respectively in the Agreste, Central, Central, West, Central and Coastal mesoregions). On the other hand, the largest decreases in production (production in 2020 less than 60% of milk production observed in 2010) were observed in the following municipalities: Lagoa D'Anta, São Bento do Trairí, Colonel Ezequiel, Bodó, Tangará, São José do Campestre and Monte das Gameleiras, with the exception of Bodó belonging to the Potiguar Central mesoregion, all other listed municipalities are in the Agreste Potiguar mesoregion. It is observed that, among the 19 microregions of the North of Rio Grande do Sul, the only one that had an increase in milk production in all its municipalities was the Western Seridó when comparing production data from 2020 with those verified in 2010. Among the Potiguares mesoregions, an increase was observed percentage in production in the Central Potiguar (70.845), West (15.85%) and decrease in the other mesoregions (Litoral, with a drop in production of 2.95%; Agreste, with a decrease in production of 2.76%). To verify the stability of production in the period, considering all years of milk production, the second model was used (average annual growth rate - TMAC). In this case, all oscillations observed in milk production between the years of the period were considered. As a result of this model, the following order was formed in relation to TMAC: Central (6.81%); West (2.72%); Agreste (0.52%); and Coast (0.14%). In this model, two of the 19 microregions in Potiguares had TMAC above 10%: Serra de Santana, Central mesoregion with 10.78% and Vale do Açu, West mesoregion with 10.69%. The biggest decrease was for the Natal microregion (-10.64% per year), located in the Litoral mesoregion. In addition to the IBGE database, information on milk quality and constituents provided by LABOLEITE/UFRN was used. Descriptive and correlation analyzes between the characteristics were performed from this database. The analyzed variables were: Fat (n=1,154, mean + standard deviation 3.82 + 0.86), Protein (n=1,205, mean + standard deviation 3.34 + 0.25), Lactose (n=1,282 , mean + standard deviation 4.56 + 0.32), Casein (n=735, mean + standard deviation 4.48 + 3.23), Total Solids (n= 1.279, mean + standard deviation 12.94 + 1.55), Defatted Dry Extract (n=1,276, mean + standard deviation 8.85 + 0.48), Somatic Cell Count - CCS (n=1,277, mean + standard deviation 515.49 + 323, 47) Total Bacterial Count - CBT (n=902, mean + standard deviation 669.89 + 792.95), Ureic Nitrogen - NU (n=1,289, mean + standard deviation 11.99 + 4.42) and Percentage of Casein (n=737, mean + standard deviation 58.28 + 32.26). All variables had significant correlations, with the exception of protein with casein, protein and CCS, Protein and CBT, Protein and NU, Total Solids and CCS. The highest positive correlations were between fat and total solids (0.94), Protein and Defatted Dry Extract (0.75), Lactose and Defatted Dry Extract (0.65), Fat and Casein (0.63). Among the negative correlations were between Casein and NU (-0.72), Casein and CBT (-0.51), CBT and NU (-0.49), Total Solids and NU (-0.37) and Lactose and NU (-0.35). In conclusion, there was a difference in the development of milk production between mesoregions, microregions and municipalities in the State of Rio Grande do Norte. The use of a more comprehensive mathematical model, such as the Average Annual Growth Rate, proved to be more suitable than the model that used only data from the initial year and the final year as a reference for calculating the growth/decrease of milk production. Regarding the data on milk quality and constituents, it is concluded that the data indicate that they are within the expected range to meet the quality and in terms of the constitution of bovine milk.
