Oxidative stress is an imbalance between the production and detoxification of reactive oxygen species, which is associated with the development of human diseases. Aiming at intermediate alternatives to experimental models that employ vertebrate animals and in vitro cell culture assays, tests on Caenorhabditis elegans (C. elegans) are an excellent option. C. elegans has signaling pathways that are highly conserved in humans and are therefore useful for studying oxidative stress. The first chapter aimed to evaluate the effect of exposure to bovine milk on the redox profile of Caenorhabditis elegans. Four samples of milk duly pasteurized were used. Standard treatment for all trials was liquid medium (S basal/M9) with 20% milk. The treatment effect was tested in L4 stage C. elegans, through body size, pharyngeal beats, progeny quantification, oxidative stress resistance and reactive oxygen species (ROS) quantification. Milk affected development, but there was no interference in the number of pharyngeal beats of the animals, nor did it cause changes in their reproductive capacity. Treatment of C. elegans with 20% milk does not seem to increase the production of ROS, but it does decrease survival under stress conditions. This study contributes to the characterization of the effects of exposure to milk in the nematode C. elegans. The second chapter covers the role of the consumer in marketing and increasing the availability of products from A2 milk (milk that contains only the A2 allele for beta-casein), which is extremely important to dictate the demand and national distribution of the product. Its objective is to carry out a survey on the knowledge, consumption and market of milk and its derivatives by the population, with an emphasis on A2 milk. On-line questionnaires through the “Google Forms” platform, with an exploratory and descriptive character, were applied to obtain answers related to knowledge and consumption of A2 milk. The research highlights the consumer's preferences and interests about A2 milk, obtaining a key resource for the insertion of an increasingly accessible and available product, drawing attention to milk producers for the genetic selection of the A2A2 cow herd.
