SUMMARY:

Understanding the sheep meat chain in Rio Grande do Norte is essential to improving the quality of the meat produced and its commercialization in the formalized market. Sheep meat production has obstacles that need to be understood in order to be solved, such as: animals of low zootechnical quality, the slaughter of animals at an advanced age, and slaughterhouses with insufficient sanitary infrastructure, which makes it impossible to regularize them with official inspection services. The six main slaughterhouses in Rio Grande do Norte were evaluated in terms of infrastructure and slaughtered livestock. In total, 335 animals were evaluated in terms of live weight, sex, approximate age at slaughter, ECC, carcass weight, carcass yield and commercial destination of the meat. It was found that there is no defined racial standard in the animals destined for slaughter. The average body condition score (3.1) is below what is desired and the average age of 14.8 months at slaughter is high, which can compromise the sensory quality of the product that reaches the consumer. Regarding sex, 55.5% of the slaughtered animals were female, indicating low yield and compromising the replacement of herds, which will probably tend to reduce in size. It was also found that the slaughterhouses selected for the research did not have adequate infrastructure and sanitary conditions, and were considered irregular from the point of view of health inspection, leading to difficulties in the commercialization of sheep meat in the formal market. It was observed that there are financial resources available from public banks for the acquisition of animals by rural producers and also public resources for the construction of public slaughterhouses by governments, but these are not sufficient to solve the problems in the sheep farming chain. It is concluded that there is a real need for technical guidance for producers in the acquisition and production of animals that result in sheep meat with the quality demanded by the modern consumer, as well as the provision of financial resources through credit lines to rural producers. In addition, the infrastructure of the slaughterhouses identified by the research materializes the urgent demand for government incentives for the construction and management of slaughterhouses by the private sector.
