RESUMO:

Introduction: The number of species of plants existing in nature is between 250 to 420 thousand, on average 20% of these are edible. In human food, 30 to 100 plant species are used, with only seven being responsible for 75% of our diet. The cultivation and processing of macroalgae can be an alternative to broaden the variety of foods with economic, social and environmental benefits. It was aimed during in this study analyzed sensory characteristic and the nutritional value of a cake prepared with an addition of the macroalga Gracilaria birdiae (G. birdiae) in comparison to the traditional cake (control).
Methods: Samples of the control cake and the G. birdiae cake were submitted to tests to identify sensorial differences, to ascertain the sensory acceptance and the intention to buy. To verify the nutritional value, samples of the macroalgae G. birdiae and of the cakes were submitted to analysis of centesimal composition.
Results: The tasters did not identify significant sensorial differences (p <0.05) between the samples. There was no preference for the sensory attributes odor and flavor, for overall texture and appearance the tasters preferred the control cake. The acceptance index was above 70% for all sensory attributes of both samples and the intention to buy was higher for the control cake. The centesimal composition of the macroalgae presented appropriate levels. For the cakes no significant difference (p <0.05) in the centesimal composition was identified.
Conclusions: The sensorial results are satisfactory and allowed to conclude that there is a possibility of the addition of G. birdiae in a cake, but in the conditions studied there is no significant difference (p <0.05) in the centesimal composition.
