SUMMARY:

Controlling oxidative stress is essential for the prevention and treatment of several chronic diseases, making the search for safe and effective antioxidants a priority. Garlic and lemon are well known for their richness in bioactive compounds; however, the use of these extracts at high doses may lead to undesirable effects or limitations related to bioavailability. To overcome these challenges, marine algal polysaccharides, such as sulfated agarans from Gracilaria birdiae, have emerged as a promising alternative for forming matrices capable of stabilizing and enhancing antioxidant properties. In this study, blends combining garlic–lemon extract (LG) with algal agaran (SPGB) were developed. Antioxidant potential and redox behavior were evaluated using in vitro assays, while stability and biological safety were assessed in cellular models and Danio rerio embryos. The results demonstrated that the LG:SPGB blend at a 3:1 ratio exhibited superior reducing capacity and metal-chelating performance compared with the plant extract alone. In addition, this formulation showed improved stability and lower toxicity. The presence of sulfated agaran allowed the maintenance of antioxidant efficiency while reducing the concentration of the garlic–lemon extract, thereby minimizing potential toxic effects. Overall, these findings indicate that the proposed blends are biocompatible systems with strong potential for future nutraceutical and pharmaceutical applications.
