SUMMARY:

Amyotrophic lateral sclerosis (ALS) is a rare neurodegenerative disease with a multifactorial cause, leading to the degeneration of motor neurons and muscle atrophy. Impairment of swallowing muscles, low food intake, and hypermetabolism are the primary causes of malnutrition in this population. Since malnutrition significantly reduces the survival and quality of life of ALS patients, addressing research questions about food consumption in various dimensions contributes to the nutritional care of this population. To achieve this goal, the presented thesis comprises three studies. Study 1, a cross-sectional observational study, assessed the prevalence of inadequate micronutrient intake in ALS patients and verified the association between nutrient intake and disease severity. Study 2, a scoping review, mapped the food frequency questionnaires (FFQ) developed and validated in Brazil. In Study 3, a cross-sectional study, a short quantitative FFQ was developed to identify the frequency of consumption of energy and protein-rich foods in patients with ALS Study 1 was conducted with data from medical records of 69 individuals. Assessment of ALS severity was determined by the ALS Functional Scale-Revised (ALSFRS-R). The prevalence of inadequate micronutrient intake was estimated using the Estimated Average Requirements (EAR) as a cutoff point. For the scoping review (Study 2), FFQ development and validation studies carried out in Brazil were included. The review was conducted in accordance with the Joanna Briggs Institute methodology for scoping reviews. Search databases included PubMed/MEDLINE, LILACS, Embase, Web of Science (ISI), Scopus, and Google Scholar. Study 3 was conducted with data from 135 24-hour medical records of 69 patients with ALS. The choice of food items that made up the food list occurred by selecting the foods that most contributed up to 90% to energy and protein consumption. In Study 1, the prevalence of inadequate intake of vitamin D, E, riboflavin, pyridoxine, folate, cobalamin, calcium, zinc, and magnesium was considered severe. Patients with a lower ALSFRS-R score had lower intakes of vitamin E (p<0.001), niacin (p=0.033), pantothenic acid (p=0.037), pyridoxine (p=0.008), folate (p=0.009), and selenium (p=0.001). Sixty articles were included in the scoping review, comprising 15 on the development of new FFQs and 45 on the assessment of the reproducibility and/or validity of existing FFQs. The target population for the FFQs included children, adolescents, adults, pregnant women, and women, from different Brazilian regions, as well as individuals with excess weight, diabetes, hypertension, and cancer. In Study 3, a self-administered quantitative short FFQ was constructed, containing 21 food items with photographic records for each item. The FFQ was designed with seven categories of intake frequency, assessing energy and protein intake over the previous month. The findings from the studies emphasize the importance of monitoring the food consumption of patients with ALS. To address this need, a brief self-administered FFQ was developed to assess the intake of energy and protein specifically for ALS patients.
