SUMMARY:

This dissertation aimed to investigate the potential of whey protein as a topic for teaching Organic Chemistry in High School, in light of the STS (Science, Technology, Society and Environment) approach. To achieve this purpose, a didactic sequence was developed and applied using whey protein as the thematic axis. Specifically, the objectives were: (i) to explore the topic to address content such as proteins, amino acids, and organic functions; (ii) to contextualize chemical knowledge in real-world situations involving food supplements; and (iii) to promote critical reflections on the social, environmental, and economic impacts related to the supplement industry. The research, of an applied nature and qualitative approach, adopted the action-research methodology, involving a 3rd-year High School class in a public school in Parnamirim-RN. The pedagogical intervention was structured in ten lessons, including activities such as label analysis, debates, construction of molecular models, simulation of a supplement store, and lectures with a professional in the field of Nutrition. The data were collected through observation records, written productions, and materials created by the students, and analyzed using Bardin's content analysis technique. The results showed that using whey protein as a theme brought Organic Chemistry closer to the students' daily lives, favoring engagement, scientific argumentation, and discussions about conscious consumption. The STS (Science, Technology, and Society) approach contributed to interdisciplinary integration and the development of competencies aligned with the BNCC (Brazilian National Curriculum). However, some difficulties were identified, such as variations in student participation, the need for conceptual review, and limitations of time and infrastructure, which suggest adjustments for future applications. It is concluded that contextualizing Chemistry teaching through socially relevant themes, combined with participatory methodologies, enhances learning and promotes civic education.
