RESUMO:

A solution of sodium periodate (APOX) was used in the modification of the starch by the oxidative process, while in the phosphorylation the sodium tripolyphosphate was used, varying its concentration with respect to the time in order to establish phosphorus limits suitable for use in foods. The chemical extraction and modification of the Formentera palm starch (Opuntia ficus-indica) is the object of study of this work. The results showed an increase of the phosphorus content obtaining the maximum according to Ordinance Nº 42/98 of 2005 in the time of 40 minutes with 7% of sodium tripolyphosphate. The results indicated that both the factors studied (time and concentration) influence in the starch phosphate (APF) due to the interaction of these independent variables. From the evaluated properties of the native starch (APNM), lyophilized starch (APL) and the modified ones the centesimal composition, phosphorus content, starch content, amylose and the shape and size of the starch granules were determined. The physicochemical properties were analyzed in the samples of the native starch, lyophilized and modified, being determined the density, swelling power, solubility index, gel characterization, turbidity, syneresis, paste viscosity, calorimetric analysis. The native starch palm presented density 1.67 g.mL-1 and the modification decreased the native starch density. The swelling power and solubility index of native, lyophilized and modified starch presented significant differences. The modification also decreased the absorbance because it facilitates the passage of light, while the syneresis was influenced by the modification, an increase occurring with the number of the storage cycle, and a decrease with the chemical modification. Phosphate starch presented higher paste viscosity than native starch because they had higher swelling power and water solubility index. The native starch extracted from the forage palm showed purity of 99.30%.
