RESUMO:

Abstract: The moringa oleifera Lamark is a tree of Indian origin with several uses in the areas of pharmacopoeia, fuels, purification of water and mainly food. It has a better development in dry climates. The culture of use as food is very broad in some African countries and with widespread expansion for Latin and Asian countries because of its rich nutritional value. In this work the centesimal analyzes of the bark and seed of two types of moringa of the UFRN and AJS trees were carried out to know the moisture, ash, protein, fat and fiber contents and to compare them and if possible compare with other analyzes Made with other trees from other locations. The two samples were divided into three parts each: the inner shell I called the pulp and the outer one I called the shell; And seeds, where they were sprayed and kept in plastic containers. After the preparation of the samples were carried out the determinations of humidity and ashes, lipids by extraction with soxhlet, Proteins by the method kjeldahl, fibers with the equipment to determine fibers, some metals by ICP-OES, besides making FT-IR and TG-MS . The results obtained showed an optimum lipid content in the seeds (29.26 and 35.83%), whereas in the pulp and the peel the contents were well below the seeds (varying 0.4 - 1.2%); The protein content had a high seed content (30.46 and 34.57%) whereas pulp and peel had a much lower content (ranging from 3.5 - 6.5%); (22.43 - 35.81%), pulp (14.41 - 26.85%) and bark (15.61 - 27.82%). The metals found in the seeds of the two samples were Ca, Cu, Fe, Mg, Mn, K, Na and Zn. The results found will be important for comparisons with future researches of trees of the same species, but living in other localities and different environments, and also to make a nutritional table of the bark and moringa seeds for future uses.
