SUMMARY:

Combining gastronomy with tourism has been a common practice in many destinations, with the aim of boosting the local economy and strengthening their identities. These cultural identities - which in this case are culinary - must be reinforced from generation to generation with the aim of preserving them. In other words, gastronomic identities evoke a sense of belonging for destination residents and offer differentiated experiences for visitors. Based on this perception and the guiding question (How is Rio Grande do Norte's gastronomic identity characterized in terms of its constituent elements?), this research seeks to analyze Rio Grande do Norte's gastronomic identity based on the relationship between documents that discuss Rio Grande do Norte's food, the state's gastronomic professionals and tourist restaurants. The general aim of this study is to understand the construction of Rio Grande do Norte's gastronomic identity, together with the influence of the tourist market. In order to achieve this objective, the following specific objectives were defined: to identify the main dishes or gastronomic elements of Rio Grande do Norte; to identify the perception of local gastronomic professionals regarding the roots of Potiguar gastronomy in the formation of Potiguar gastronomic identity; to verify the menus of tourist restaurants in terms of their connection with Potiguar gastronomy and the influences of the tourist market. The work is directed from a qualitative-quantitative perspective, with the intention of verifying not only the quantification of general data, but also directing the results from a cultural and identity perspective with regard to literature, professionals and local food services. The locus of the research is the state of Rio Grande do Norte - more specifically, 15 cities selected on the basis of the new map of the state's tourist hubs. In this sense, a triangulation of data will be carried out between a content analysis (thematic categorical) with the aid of Iramuteq software and supported by a semi-structured interview with gastronomy professionals in RN, descriptive and quantitative analysis of the menus of the restaurants in the selected cities that are available on the TripAdvisor website, as well as a qualitative descriptive analysis based on books, articles, theses, dissertations, IPHAN, INPI and the Official Gazette of RN. The results obtained are expected to characterize the gastronomy identity of the state of Rio Grande do Norte based on its constitutive elements, thus attracting the attention of public authorities in the construction of public policies aimed at promoting tourism based on traditional and local gastronomy, preserving know-how and promoting the identity of Rio Grande do Norte.
