INDUSTRIALIZATION PROCESS OF HEALTHY PRODUCTS AIMED AT SUPERMARKET NETWORKS

This dissertation aims to present the development process of a production line of natural products with nutritional quality, in the Favorito’s supermarket chain, in a staggered manner, following the food safety parameters during the manufacturing process. It adopts as a basis the trend of the industrialization process of healthy products aimed at supermarkets, with the intention of adding value to the product and, at the same time, guaranteeing nutritional quality. The methodology used is based on a bibliographic study and field study on the subject. As a result, a staggered production sector of natural products is expected, especially minimally processed vegetables and natural fruit juice, which serves customers who are willing to invest time and financial resources for a longer and better quality life. Analyzes of the sales data of the developed products extracted from the Consinco system from the ABC Venda Distribuição curve will be used, in view of identifying the relationship between the product line generated and the revenue of the fruit and vegetable sector of that supermarket.
