Based on Project Pedagogy (PP), this work aims to develop a Didactic Guide (DG) titled “The Essential Chemistry of Peppermint: A Didactic Guide for the Study of Organic Functions” for students of technical courses in Chemistry and Agriculture at EEEP. The research will be conducted through participant observation, involving stages of planting, harvesting, and extracting essential oils. Qualitative data will be collected through audio-photographic records and field notes, alongside experiments conducted in the Technical course laboratory. This theme seeks to provide an understanding of organic functions and develop cognitive and socio-emotional skills. The Teaching Guide, following PP, includes chapters on the five stages of study proposed by Nogueira (2008): Planning, Execution, Debugging, Presentation, and Exposition. This project will enable students to learn basic concepts of Organic Chemistry in a contextualized manner.
