SUMMARY:

This research project proposes the development and application of a Didactic Unit (DU) on the teaching of the physical properties of triglycerides using an environmental approach. It focuses on the impact of the improper disposal of oily kitchen waste and their recycling to mitigate the related environmental impacts. The study also aims to analyze the contribution of this DU in fostering meaningful learning of the physical properties of organic compounds. It also makes a significant contribution to the training of students on the technical course in Accommodation at the Professora Marly Ferreira Martins, State Professional Teaching School. This institution is located in the city of Caucaia in the state of Ceará, where the professional course is integrated with High School. This survey is based on the qualitative methodological approach of action research, which seeks to understand reality based on the perceptions of the participants. The methodology focuses on environmental impact and includes the application of the didactic unit entitled UNDERSTANDING THE PHYSICAL PROPERTIES OF THE CHEMICAL COMPONENTS PRESENT IN KITCHEN WASTE OILS AND THE IMPACT OF THEIR DISPOSAL ON THE ENVIRONMENT, which includes activities such as the screening of videos on the problem of improper disposal of oily kitchen waste, lectures, conversation circles and workshops to relate the theme of conscious waste disposal to the physical properties of the chemical compounds present in triglycerides. The project aims to involve students in a practical and meaningful way, preparing them as agents of change in the environmental management of the companies where they will work, offering them more competent professionals in environmental management. It also aims to promote sustainable and contextualized education. The results indicate that the majority of students are unaware of the correct destination for the disposal of frying oil, with almost half of them disposing of it inappropriately. The majority of students have little familiarity with the physical properties of substances, most of them don't remember or confuse these concepts. Although they are able to observe the effects of physical properties, such as the non-miscibility of water and oil, they are unable to explain the cause, indicating simply mechanical learning. With regard to professional training, the students face difficulties in the disciplines of Natural Sciences and Mathematics, even though they recognize their importance, but few are able to associate the content learned in these disciplines with their future profession. It is hoped that this will help students to develop new skills and reorganize their previous knowledge in order to build new ones, giving them meaning. Thus, using them to understand and as tools for transforming the social context in which they find themselves.
