SUMMARY:

In the teaching area, the problematized experimentation and the contextualization have been objects of study of many researches. Varying teaching methodologies is important in the classroom and the teacher becomes a key player in this role of developing more dynamic and engaging classes for students. From this perspective this work proposes a discursive and experimental didactic workshop with contextualized activities mediated by problem situations, working on the concepts of acids and bases articulated to the context of food. The research characterized as qualitative was developed with 23 students of the 3rd grade of High School integrated to the technical kitchen course of the Integral Citizen School Pastor João Pereira Gomes Filho, located in the city of João Pessoa, Paraíba. As instruments to collect the data were used an initial survey questionnaire and the students' notes on the activities of the experimental practices. As a partial analysis of the works we observed the answers of the survey questionnaire where it can be seen that 52.1% of the students demonstrated their knowledge of acids in a conceptual way (13% by the Bronsted-Lowry definitions and 39.1% based on the concepts of pH), however presenting some confusions that according to FURIÓ-MÁS et al. (2005, p. 13) it is common for students to do them, because even textbooks also present definitions with few details generating these confusions. It was also observed that 21.7% of students responded based on sensory analysis stating that acid is all that tastes sour and 26.2% said they could not define or their answers were not understood. Through the answers given and the lack of homogeneity we identified that the application of the workshop as a pedagogical practice can achieve the goal of homogenizing the understanding and application of acid and base concepts.
