SUMMARY:

Resulting from Portuguese architectural influence, public squares have historically been central elements in Brazilian cities, both morphologically, since the emergence of a city traditionally required a chapel and a piece of land that would become the central square, and functionally, as squares were long the main spaces for social interaction and community gatherings. This historical significance has led to the presence of numerous squares in contemporary cities, some of which have incorporated new activities, such as food commerce for out-of-home consumption. Considering this, the research guiding question is: What is the importance of public squares for the dynamics of the out-of-home food commerce established within them? The main objective of this thesis is to analyze the public squares of Mossoró-RN as spaces for food commerce and services, examining the dynamics of this relationship. The thesis argues that, in Mossoró, out-of-home food commerce plays a crucial role in the use of public squares, both by driving foot traffic through consumption and by transforming these spaces into areas of interest for various stakeholders. The methodology adopted for this research initially involved a theoretical review on the transformation of public square usage and out-of-home food consumption. Subsequently, establishments were selected based on the Classificação Nacional de Atividades Econômicas (CNAE, 2020), along with secondary data sources such as the Instituto Brasileiro de Geografia e Estatística (IBGE), the Relação Anual de Informações Sociais (RAIS) and Cadastro Geral de Empregos e de Desempregados (Caged). By incorporating geographical perspectives on consumption—whether as a necessity or as an element of consumer culture—this study highlights aspects such as the use of public spaces, their commodification, and the specificities and strategies of out-of-home food consumption. These themes contribute to understanding the new consumption dynamics that not only reshape geographical spaces but also reconfigure social complexities.
