Introduction: The consequences of environmental deterioration resulting from human activities have prompted a search for the advancement of One Health, which encompasses the interconnection of human, animal, and environmental care. Food systems exert a significant influence on the capacity of planetary boundaries. It is of paramount importance to comprehend the environmental impact of individuals' food consumption and the factors that can influence it if the promotion of healthy and sustainable diets is to be achieved. Objective: Understand the environmental footprint of food consumption by adults and seniors and verify its relationship with adherence to the recommendations of the Brazilian Food Guide, social determinants, and health aspects. Methodology: A variety of methodologies were employed in this study. A systematic literature review was conducted to examine the environmental footprints of adults and seniors in population-based studies across the globe. Additionally, cross-sectional studies were conducted with adults and seniors from the Brazuca Natal/RN study. The carbon, water, and ecological footprints of the diet were calculated based on a 24-hour food recall. A multiple analysis was carried out to assess the relationship between the environmental footprint of the diet and adherence to dietary practices, which was obtained using a validated questionnaire. Individuals' social and economic variables were also assessed to verify Social Determinants of Health and a multinomial logistic regression was applied. Results: The findings of the review indicated that the environmental footprints of individuals can be influenced by factors related to their measurement. These factors were found to be more significant among men and adults. In the initial cross-sectional study, the diet of Natal residents was found to have a carbon footprint of 6194.19 gCO2e/cap/day, a water footprint of 6836.65 L/cap/day, and an ecological footprint of 44.56 g-m2/cap/day. Foods of animal origin and ultra-processed foods made the greatest contributions to the three environmental footprints. Dietary practices such as participating in food preparation (PH: PR = 1.56 CI: 1.26-1.93; PE: PR = 1.40 CI: 1.04-1.89) and avoiding replacing lunch or dinner with sandwiches, snacks, or pizza (PE: PR = 1.42 CI: 1.01 -1.99) were associated with lower environmental footprints. On the other hand, frequenting fast-food restaurants and snack bars were associated with higher environmental footprints (PH: 1.69 CI: 1.12- 2.56). In the 2nd cross-sectional study, it was found that females (PC: OR = 0.222 CI: 0.131-0.378; PH: OR = 0.194 CI: 0.111-0.340) and seniors (PC: OR = 0.413 CI: 0.245-0.697; PH: OR = 0.389 CI: 0.218-0.697) were less likely to have higher Carbon and Water Footprints. In terms of Ecological Footprint, the female sex reduces the chance of having a higher footprint (OR = 0.250 CI: 0.147-0.424), while daily access to treated water increases the probability of having a higher ecological footprint (OR= 2.172 CI: 1.009-4.675). Final considerations: Adherence to dietary practices in line with the GAPB recommendations, especially those aimed at reducing ultra-processed foods, favors the reduction of environmental footprints. In addition, the findings demonstrate the need to consider the aspects that influence individuals' diets to better understand the results of environmental footprints.
