SUMMARY:

In an attempt to bring in essence the gastronomic culture of the Brazilian Northeast until its transformation into a product for tourist use, this thesis adopts a phenomenological epistemological stance in the effort to unravel what has been called the Northeast Brazilian Gastronomic Tourist Product - PTGNB, observing the numerous (spatialized) relationships that constitute this product. This time, the general objective is to spatialize how the PTGNB identity is constituted currently on offer. For that, the specific objectives are: to identify the gastronomic products that symbolize each capital of the Northeast; to structure a matrix for decoding the PTGNB dimensions, and to particularize the gastronomic tourist products through their multidimensional perspective, within these numerous relationships that compose it. It is, therefore, a research with a qualitative approach, with a descriptive and exploratory character. To this end, colletion techniques were chosen for each specific objective listed, namely: documental research, bibliographic research, seminstructured interviews and participant observation. As analysis techniques, content analysis and discourse analysis will be used, supported by phenomenological reflection, with a delimitation of the research in the nine capitals of the Northeast: Maceió, Salvador, Fortaleza, São Luiz, João Pessoa, Recife, Teresina, Natal and Aracaju. When constituting the empirical field, from the initial criterion of the offer of the referred capitals of the Northeast, the path of constitution of these products is sought, in order to relate and find a “Northeast Gastronomic Identity”, from the PTGNB. In this sense, it is intended to operationalize the concept of spatiality, with scientific support in its symbolic perspective, in which it starts from the assumption that the use of territory by the people creates this physical/ symbolic space. From this abstraction, it is observed that people, territory and gastronomic culture are structuring elements of space under study. The triangulation of sources, in turn, aims to deepen the understanding of the relationship between this food cultural heritage and its emphasis on the tourist offer, in the direction of a tourist cultural product inserted in the context of sun and beach tourism. The spatial clipping investigated is delimited and justified in view of the emphasis on tourist centers in the capitals of the nine states of the Northeast region of Brazil, considering their socioeconomic indicators in relation to tourist activity. In the end, it is hoped that this study can contribute to thinking about strengthening the identity of the Northeast region through the measurement of the tourist product of this region, in order to diversify and strengthen the tourist activity that has been widely spread and practiced in the Brazilian Northeast space
