SUMMARY:

Tourism happens when people are willing to leave their surroundings motivated by peculiarities present in a destination. Typical dishes and products can easily be incorporated as tourist attractions. The tourist is fond of objects that represent the local culture of the visited destination, if there are identity foods available, the tourist will certainly not be reluctant to taste or take them on the way back home. From this premise, the importance of tourist attractions is evidenced as a form of motivation for the arrival of tourists. The objective of this study is to analyze the gastronomic heritage of Rio Grande do Norte (RN) in order to strengthen the brand identity. The work developed comprises field and documentary research with a predominantly qualitative approach and with some quantitative aspects, of an applied nature and with exploratory objectives. In order to fulfill the objective of verifying how memory and food identity are perceived in the tourist's perspective, user-generated content (UGC) referring to the tourist experience in contact with foods representative of the gastronomic heritage of Potiguar is used. To investigate the management of gastronomic tourism, semi-structured interviews will be conducted with the actors involved. In the data analysis, the software IRAMUTEQ version 0.7 will be used for the similitude test and word cloud, in addition to the content analysis in relation to the categories of memory, identity and cultural heritage. Preliminary results indicate that few government actions have been taken regarding the protection of the gastronomic heritage of RN, while analyzing the UGC, several aspects of memory, identity and heritage are found in the experience of the traveler who experiences regional delicacies.
