Probiotics are defined as live microorganisms that confer health benefits to the host when administered in adequate amounts. Fruit and vegetable juices stand out as excellent probiotic vehicles and can be an alternative for audiences with dietary restrictions. In this context, the objective of this study was to develop vegetable probiotic beverages based on oats and enriched with anthocyanins from jambolan (Syzygium cumini), and to evaluate their bioactive properties, stability and microbial viability during storage, and effects of supplementation in an animal model with Type 2 Diabetes. Initially, a narrative review of the literature was carried out, searching for in vitro and in vivo studies, in order to present the functional properties of probiotics in vegetable matrices. The results compiled in the review indicated scientific evidence related to the benefits of probiotics in vegetable food matrices and the association with bioactive compounds, being effective in the treatment of several diseases such as cancer, liver disease, obesity and chronic and inflammatory diseases. Probiotic beverages based on water-soluble oat extract, containing grapes, Lactobacillus acidophilus LA14 and enriched with 3 and 5% jambolan extract were also developed. Over 28 days of storage, viability above 9 Log CFU/mL was observed in all beverages, with the best viability results found in the formulations that used anthocyanin extract (10.8–12.59 log CFU/mL), in addition to presenting viability of 10 Log CFU/mL after simulated gastrointestinal digestion. An increase in antioxidant activity was also observed. The general acceptance of the probiotic beverage enriched with 3% extract was 67.7%. Finally, the beverage enriched with 3% jambolan extract was evaluated in the treatment of type 2 Diabetes Mellitus, in an animal model. These results indicate the potential of the beverages, showing improvements in viability and biological activities, and could be an option as a plant probiotic vehicle and in the treatment of pathologies.
